Each of our dining concepts reflects a regional focus - from the seafood rich Baja coastline to the plains of Argentina - through décor and menus that celebrate the locations encountered as you travel the Pan American roadways.

The Agave LibraryTucked behind decorative wrought-iron doors, this specialty room offers a tasting experience that centers on premium agave-based spirits. Each tasting menu is complemented by an extensive selection of notable tequila, mezcal, and other agave-forward libations.
Chocolate Master Class
Learn the art of chocolate sculpting and decorating from our award-winning pastry chef and master chocolatier Francois Behuet. Get a sneak-peek at how Chef Francois creates incredible themed amenities and chocolate showpieces for holidays and award show weekends. Attendees receive a custom apron to take home, along with their chocolate showpiece.
